A weeknight staple. Sear chicken thighs skin-side down until golden, add garlic, lemon, and a splash of stock, then finish in the oven for 20 minutes. Serve with rice.

Slow-Cooked Tomato Soup

Roast tomatoes with onion and a little olive oil, blend with basil, and simmer gently. Best with a grilled cheese sandwich on a cold day.

Weekend Focaccia

A wet dough, a long rise, plenty of olive oil, and flaky salt. Dimple it well before baking so the oil pools in the pockets.
